Pasta With Pink Sauce

 
Ingredients:

  • 8 ounces (225g) penne pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (14 ounces/400g) diced tomatoes
  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) tomato sauce
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup (25g) grated Parmesan cheese
  • Fresh basil leaves, for garnish (optional)
Instructions:

  1. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion. Sauté until the onion becomes translucent and the garlic is fragrant, about 2-3 minutes.
  3. Add the diced tomatoes to the skillet, including the juice from the can. Stir in the tomato sauce, dried basil, dried oregano, salt, and pepper. Allow the sauce to simmer for 10-15 minutes, stirring occasionally.
  4. Reduce the heat to low and pour in the heavy cream. Stir well to combine with the tomato sauce. Let the sauce simmer gently for another 5 minutes.
  5. Add the cooked penne pasta to the skillet and toss it in the sauce until it is fully coated. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  6. Remove the skillet from heat and sprinkle grated Parmesan cheese over the pasta. Toss lightly to incorporate the cheese into the sauce.
  7. Serve the pasta with pink sauce hot, garnished with fresh basil leaves if desired. Enjoy!
