Vegetable Patties

 


Ingredients:

  • 2 cups of grated vegetables (such as carrots, potatoes, and zucchini)
  • 1/2 cup of breadcrumbs
  • 1/4 cup of all-purpose flour
  • 1 egg
  • 1/4 cup of chopped fresh herbs (such as parsley, cilantro, or chives)
  • Salt and pepper, to taste
  • Vegetable oil for frying

Instructions:

  1. In a large mixing bowl, combine the grated vegetables, breadcrumbs, flour, egg, herbs, salt, and pepper. Mix well until the ingredients are well combined.
  2. Form the mixture into small, flat patties, about 1/4 inch thick.
  3. Heat a large skillet over medium-high heat and add enough vegetable oil to cover the bottom of the skillet.
  4. Once the oil is hot, carefully place the patties in the skillet and cook for 3-4 minutes on each side, or until they are golden brown and crispy.
  5. Use a slotted spoon to remove the patties from the skillet and drain them on a paper towel-lined plate.
  6. Serve the patties warm, with your favorite dipping sauce or as a side dish.

Note: You can add finely chopped onions, garlic and ginger to the mixture for extra flavor.
