Ingredients:
- 2 cups of grated vegetables (such as carrots, potatoes, and zucchini)
- 1/2 cup of breadcrumbs
- 1/4 cup of all-purpose flour
- 1 egg
- 1/4 cup of chopped fresh herbs (such as parsley, cilantro, or chives)
- Salt and pepper, to taste
- Vegetable oil for frying
Instructions:
- In a large mixing bowl, combine the grated vegetables, breadcrumbs, flour, egg, herbs, salt, and pepper. Mix well until the ingredients are well combined.
- Form the mixture into small, flat patties, about 1/4 inch thick.
- Heat a large skillet over medium-high heat and add enough vegetable oil to cover the bottom of the skillet.
- Once the oil is hot, carefully place the patties in the skillet and cook for 3-4 minutes on each side, or until they are golden brown and crispy.
- Use a slotted spoon to remove the patties from the skillet and drain them on a paper towel-lined plate.
- Serve the patties warm, with your favorite dipping sauce or as a side dish.
Note: You can add finely chopped onions, garlic and ginger to the mixture for extra flavor.
