Ingredients:
- 1 and 3/4 cups (220g) all-purpose flour
- 3/4 cup (65g) unsweetened cocoa powder
- 1 and 3/4 cups (350g) granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup (240ml) buttermilk, at room temperature
- 1/2 cup (120ml) vegetable oil
- 2 tsp vanilla extract
- 1 cup (240ml) boiling water
Instructions:
- Preheat your oven to 350°F (180°C). Grease and flour two 9-inch (23cm) round cake pans.
- In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In a separate mixing bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract.
- Slowly pour the wet ingredients into the dry ingredients, whisking until combined.
- Stir in the boiling water, being careful as the batter will become thin.
- Divide the batter evenly between the prepared pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool for 10 minutes in the pans, then remove them from the pans and transfer them to a wire rack to cool completely.
- Once the cakes are cool, you can frost and decorate them as desired. Enjoy!
