Chocolate Cake

Ingredients:

  • 1 and 3/4 cups (220g) all-purpose flour
  • 3/4 cup (65g) unsweetened cocoa powder
  • 1 and 3/4 cups (350g) granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240ml) buttermilk, at room temperature
  • 1/2 cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water

Instructions:

  1. Preheat your oven to 350°F (180°C). Grease and flour two 9-inch (23cm) round cake pans.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In a separate mixing bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract.
  4. Slowly pour the wet ingredients into the dry ingredients, whisking until combined.
  5. Stir in the boiling water, being careful as the batter will become thin.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool for 10 minutes in the pans, then remove them from the pans and transfer them to a wire rack to cool completely.
  9. Once the cakes are cool, you can frost and decorate them as desired. Enjoy!
