Ingredients:
- 2 large eggs, separated
- 1/4 cup of milk
- 1/4 teaspoon of vanilla extract
- 1/4 teaspoon of cream of tartar
- 2 tablespoons of sugar
- 1/4 cup of all-purpose flour
- 1/4 teaspoon of baking powder
- Pinch of salt
- Butter or oil for greasing the pan
Instructions:
- Separate the egg whites and yolks into two different bowls.
- In the bowl with the egg yolks, add the milk and vanilla extract and whisk until well combined.
- In a separate bowl, mix together the flour, baking powder, and salt.
- Add the flour mixture to the bowl with the egg yolks and whisk until the batter is smooth.
- In the bowl with the egg whites, add the cream of tartar and beat with an electric mixer until the egg whites are fluffy and form soft peaks.
- Gradually add the sugar to the egg whites while continuing to beat until the egg whites form stiff peaks.
- Gently fold the egg whites into the batter until well combined.
- Heat a non-stick pan over medium heat and grease it with butter or oil.
- Spoon the batter onto the pan to form the pancakes, making them about 4 inches in diameter.
- Cook the pancakes for about 2-3 minutes on each side, or until they are golden brown and cooked through.
- Serve the pancakes hot with your desired toppings, such as fresh fruit, maple syrup, or whipped cream.
