Souffle Pancake

 

 


 

 Ingredients:

  • 2 large eggs, separated
  • 1/4 cup of milk
  • 1/4 teaspoon of vanilla extract
  • 1/4 teaspoon of cream of tartar
  • 2 tablespoons of sugar
  • 1/4 cup of all-purpose flour
  • 1/4 teaspoon of baking powder
  • Pinch of salt
  • Butter or oil for greasing the pan 


Instructions:

  1. Separate the egg whites and yolks into two different bowls.
  2. In the bowl with the egg yolks, add the milk and vanilla extract and whisk until well combined.
  3. In a separate bowl, mix together the flour, baking powder, and salt.
  4. Add the flour mixture to the bowl with the egg yolks and whisk until the batter is smooth.
  5. In the bowl with the egg whites, add the cream of tartar and beat with an electric mixer until the egg whites are fluffy and form soft peaks.
  6. Gradually add the sugar to the egg whites while continuing to beat until the egg whites form stiff peaks.
  7. Gently fold the egg whites into the batter until well combined.
  8. Heat a non-stick pan over medium heat and grease it with butter or oil.
  9. Spoon the batter onto the pan to form the pancakes, making them about 4 inches in diameter.
  10. Cook the pancakes for about 2-3 minutes on each side, or until they are golden brown and cooked through.
  11. Serve the pancakes hot with your desired toppings, such as fresh fruit, maple syrup, or whipped cream.
