Ingredients:
- 1 lb. of large shrimp, peeled and deveined
- 3 cloves of garlic, minced
- 1/4 cup of olive oil
- 2 tbsp of lemon juice
- 1 tsp of dried oregano
- Salt and pepper, to taste
- Lemon wedges and parsley for garnish
Instructions:
- In a small bowl, mix together the garlic, olive oil, lemon juice, oregano, salt and pepper.
- Add the shrimp to the marinade, making sure that each shrimp is well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.
- Heat a skillet over medium-high heat. Drain the shrimp from the marinade, reserving the marinade.
- Cook the shrimp in the skillet for 2-3 minutes per side, or until they are pink and cooked through.
- Add the reserved marinade to the skillet, and bring to a boil. Cook for 1-2 minutes, or until the sauce has thickened.
- Serve the shrimp with the sauce and garnish with lemon wedges and parsley. Enjoy it with rice, pasta or any side dish.
