Lemon Garlic Shrimp

 


Ingredients:

  • 1 lb. of large shrimp, peeled and deveined
  • 3 cloves of garlic, minced
  • 1/4 cup of olive oil
  • 2 tbsp of lemon juice
  • 1 tsp of dried oregano
  • Salt and pepper, to taste
  • Lemon wedges and parsley for garnish

 

Instructions:

  1. In a small bowl, mix together the garlic, olive oil, lemon juice, oregano, salt and pepper.
  2. Add the shrimp to the marinade, making sure that each shrimp is well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.
  3. Heat a skillet over medium-high heat. Drain the shrimp from the marinade, reserving the marinade.
  4. Cook the shrimp in the skillet for 2-3 minutes per side, or until they are pink and cooked through.
  5. Add the reserved marinade to the skillet, and bring to a boil. Cook for 1-2 minutes, or until the sauce has thickened.
  6. Serve the shrimp with the sauce and garnish with lemon wedges and parsley. Enjoy it with rice, pasta or any side dish.

This dish is a great option for seafood lovers, it's easy to make and ready in less than 30 minutes and it is a perfect meal for a weeknight dinner or special occasions.
