Ingredients
- 1 pound pasta (any variety)
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup cooked vegetables (such as broccoli, bell
peppers, or zucchini)
- 1 cup cooked protein (such as chicken, shrimp, or tofu)
- 1/4 cup white wine (optional)
- 1/4 cup parmesan cheese, grated
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil and cook
pasta according to package instructions.
- In a separate pan, heat the olive oil over medium heat.
Add the minced garlic and sauté until fragrant.
- Add the cherry tomatoes and cooked vegetables to the
pan and cook until tender.
- If using, add the white wine to the pan and let it
simmer for a few minutes.
- Add the cooked protein to the pan and toss to combine.
- When the pasta is done cooking, drain it and add it to
the pan with the sauce. Toss to coat the pasta evenly.
- Sprinkle parmesan cheese over the top of the pasta and
season with salt and pepper to taste.
- Serve immediately and enjoy!
