Ingredients
- 500g rice (washed in cold water)
- 500g mushroom (diced)
- 2 medium white onions
- 3 medium bell pepper (diced)
- 2 medium carrot (grated)
- 4 Tbsp oil
- 1 Tbsp tomato paste
- 1Tsp dried thyme
- Salt, to taste
- 1.5 Litres Vegetable stock
- 1 Than dried parsley or a handful fresh chopped
- ¼ tsp ground pepper
Instructions
Heat the oil in a large pan. Add chopped onion and grated carrot and diced bell pepper
and fry for 10 minutes.
Mix in the thyme, salt, apinch of black papper
When the mushrooms get soft, add the rice.
Add the tomato paste and the veg stock and give it a good stir.
If the gets reduced while cooking and the rice is not soft enough, add a little bit more water,
taste and adjust the seasoning if needed.
Finaly add the fresh or dry pasley, turn off the stove and keep covered for a few minutes.
